DeChiel is the name, honoring my paternal grandmother's French Hugenot lineage, which I use for my wines of highest quality and of limited production.

Aging: This Chardonnay is predominantly barrel fermented and aged sur lies (69%) with the remainder fermented in stainless steel (31%). 28% was aged in new French and American oak.

The wine has a delightful apple/butterscotch nose with a full and soft palate of medium length. Particularly good with flavorful and higher oil fish like salmon or tuna, lightly seasoned with dill and garlic.
