Chambourcin is a French hybrid variety which yields a very dark and intensely fruity red wine, low in astringent tannins but high in acidity. When cropped lightly it can make a very intense red wine drinkable when young but capable of rewarding aging.
Adding a bit of Cabernet Sauvignon or Cabernet Franc adds tannin which fills out the middle palate, creating a much more complete wine.
